BROWN BUTTER SALMON (serves 2)
Purée
1kg Jerusalem artichokes
Sea salt
Black pepper
Knob butter
Salmon
2 salmon fillets
2 tbsp. butter
Fresh thyme
Fresh rosemary
Sea salt & black pepper
1 juicy lemon
5 garlic cloves
Gremolata
1 juicy lemon (zest & juice)
60g flat leaf parsley
1 garlic
80ml olive oil
Sea salt
30g blanched hazelnuts
1 romanesco
4 shallots
CELERIAC, BUTTERNUT SQUASH & CHICKPEA CURRY (serves 4)
1 celeriac
½ medium butternut squash
1.5 cup cooked chickpeas
2 white onions
5 garlic cloves
2 inch thumb ginger
400ml coconut milk
2 tbsp. tomato paste
1 tbsp. cumin seeds
1 tsp. coriander seeds
½ tsp. fennel seeds
1 tbsp. garam masala
1 tsp . turmeric
1tsp. all spice
1 tbsp. curry powder
Sea salt & black pepper
Fresh coriander
Coconut oil
1 cup water (add more if necessary)
