竹笋炒肉(Stir-Fried Meat with Bamboo Shoots)

竹笋炒肉,是一道常见菜肴。以鲜笋、猪肉、香葱作为主要食材,盐、味精、糖、料酒、酱油、食用油作为调料制作而成。口味咸鲜。
流行于四川、重庆、江西、福建等地。
1、竹笋切片,肉切片,肥肉另外放置待用,瘦肉用糖,盐,油,老抽和淀粉腌制半个小时,蒜拍碎。

2、锅烧热,不用放油,把竹笋放进锅里,加少许盐,翻炒一分钟。
3、锅里放少许油,烧至4成热,把肥猪肉放进去炒至微微出油,放进蒜米爆香,把腌制好的肉片放进去炒至肉色发白。
4、把竹笋倒进锅里,加生抽炒匀即可。
