Safflower leaf vegetable (also called safflower spinach) is the gold standard of vegetable crops. It provides both nutrition and medicine. Most people who cannot tolerate other vegetables will find the safflower vegetable very tasty and friendly to the stomach. It takes 40-50 days to harvest and does not require any pesticides unlike most of the vegetables grown commercially and sold in the supermarkets. Preserving the vegetable by solar dehydration retains the vital nutrients and medicines thus making it possible to grow the vegetable in the rainy season and keeping enough supply to use throughout the year.
The Safflower Africa Project is targeting small scale farmers to grow and dehydrate the vegetable for the export market starting with the farmers in Botswana.
