Cheesy Potato and Mince Bake
Ingredients
For the Potatoes:
1 kg potatoes, cut into small pieces
1 tsp salt
½ tsp turmeric
½ tsp black pepper
4 tbsp oil
For the Mince:
2-3 tbsp oil
2 onions, chopped
500 g mince (beef or lamb)
1 tsp tomato paste
½ tsp salt
½ tsp black pepper
2 tsp mixed herbs
1 cup (400 ml) beef stock
For the White Sauce:
2 tbsp butter
2 tbsp flour
800 ml milk (about 2 cups)
½ tsp salt
½ tsp nutmeg
½ tsp black pepper
For the Topping:
1 cup grated cheese
Instructions
Prepare the Potatoes:
Preheat the air fryer to 180°C (350°F).
In a large bowl, mix the potato pieces with 1 tsp salt, ½ tsp turmeric, ½ tsp black pepper, and 4 tbsp oil until evenly coated.
Air fry the seasoned potatoes for about 15 minutes, or until golden and crispy.
Cook the Mince:
While the potatoes are cooking, heat 2-3 tbsp oil in a pan over medium heat.
Add the chopped onions and fry until they turn brown.
Add the mince to the pan and fry for about 5 minutes, breaking it up as it cooks.
Stir in 1 tsp tomato paste, ½ tsp salt, ½ tsp black pepper, and 2 tsp mixed herbs.
Pour in 1 cup (400 ml) beef stock and let it cook for about 10 minutes, until the mixture thickens slightly.
Make the White Sauce:
In a separate pan, melt 2 tbsp butter over medium heat.
Add 2 tbsp flour and cook for 1-2 minutes, stirring constantly to prevent burning.
Gradually add 800 ml milk (2 cups), continuing to stir to avoid lumps.
Season with ½ tsp salt, ½ tsp nutmeg, and ½ tsp black pepper.
Keep stirring until the sauce thickens to a creamy consistency.
Assemble and Bake:
Preheat your oven to 180°C (350°F).
In an oven-proof dish, layer the cooked mince, then the air-fried potatoes, and finally pour over the white sauce.
Sprinkle the grated cheese evenly on top.
Bake in the preheated oven for about 15 minutes, or until the cheese is golden and bubbly.
Tips and Tricks
Consistency of the Sauce: Ensure the white sauce is thick enough to coat the back of a spoon. If it’s too thin, it may make the dish watery.
Cheese Options: Feel free to mix different cheeses for a richer flavor. Cheddar, mozzarella, or even Parmesan can be great choices.
Herbs and Spices: Adjust the herbs and spices to your taste. Fresh herbs like parsley or thyme can add a nice touch.
