🍲 Chicken Corn Soup (Serves 4–5)

🥣 Ingredients
• 500g Chicken boneless chicken (boiled & shredded)
• 300 g sweet corn (1½ cups; you can blend half for creaminess)
• 5 cups (1.25 liters) water
• 2 tbsp cornflour (cornstarch) mixed with 4 tbsp water
• ½ tsp salt (adjust to taste)
• ½ tsp white pepper powder
• ½ tsp black pepper powder
• 2 tbsp soy sauce
• 1 tbsp vinegar
• 1 egg white
• 1 tbsp oil or butter

🔪 Instructions
1. Prepare Chicken:
Boil chicken in lightly salted water until fully cooked. Shred finely and keep aside.
2. Cook Corns:
In a pot, heat 1 tbsp oil or butter. Add corn kernels and sauté for 2–3 minutes.
Pour in 5 cups water or stock. Bring to a gentle boil.
3. Blend for Creaminess:
Blend half of the boiled corn mixture until smooth (optional step) and return to the pot for thicker texture.
4. Add Chicken & Seasoning:
Stir in shredded chicken, salt, white pepper, and black pepper, soya sauce and vinegar. Cook on medium heat for 5 minutes.
5. Thicken Soup:
Gradually add the cornflour slurry while stirring. Simmer 2–3 minutes until slightly thickened.
6. (Optional) Add Egg White:
Slowly drizzle beaten egg white into the simmering soup while stirring in one direction — it forms silky ribbons.
7. Finish & Serve:
Adjust seasoning. Serve hot with soy sauce, chili vinegar, and black pepper on the side
