Tuna Pasta Puttanesca (Ready in 10 mins!)

This is one of my favourite pasta recipes of all time. The combination of juicy ripe tomatoes paired with oil packed tuna and black olives is absolutely mouth watering.
I make this pasta at least once a week because it comes together in under 10 mins. Hard to believe right? But wait until you try it out for yourself. I've shared this recipe with a few of my friends, and once they started making it, they weren't able to stop. So addictive!

RECIPE
INGREDIENTS
1/2 lb, Linguini
2 tbsp, Olive Oil
2 cloves Garlic, finely chopped
1/2 cup, Black Olives (pitted and roughly chopped)
1/4 tsp, Dried Red Chili Flakes
3 Roma Tomatoes, seeded and diced
9 oz (240 g), Italian Tuna packed in Olive Oil (drained)
Salt to taste
Fresh chopped Parsley to garnish
METHOD
Bring a large pot of water to a rolling boil and season it with enough salt so that it tastes like the sea. Add linguini, and cook until al dente (7-8 minutes). Reserve a little bit of the cooking water (to prepare sauce later), and drain the pasta. Set aside.
Heat a pan on medium heat and add olive oil and garlic. Cook garlic for 15-20 seconds until just aromatic, but not browned. Add olives and chili flakes and cook for 1-2 minutes, or until you hear the olives start to crackle.
Increase heat to medium-high and add chopped tomatoes. Cook for 5 minutes or until the tomatoes have slightly broken down and the oil begins to separate from them along the edges.
Add tuna, and break gently with the back of a spoon. Fold into tomatoes and heat through for 1 minute.
Add linguini to pan, and 1/4 cup-1/2 cup of reserved cooking water. Increase heat to high, and stir to coat linguini with sauce. Taste, and add salt as needed (the olives are salty, so this sauce doesn't require a lot of salt).
Remove from heat and garnish with chopped parsley. Enjoy!
