Bruschetta with Vegan mozzarella cheese

It’s #TastyTuesday with my new favorite an Italian bruschetta! I added my twist on it by adding some red peppers for a bit of heat and vegan mozzarella cheese yumm yumm! You can do this with a vegan parmesan cheese as well. This is bursting with some great flavors. Add it to a nice pasta dish or eat it alone it’s delicious both way.
Ingredients:
FOR THE TOMATOES
3 medium tomatoes, diced
3 cloves garlic, diced
2 tbsp olive oil
1 Tbsp basil seasoning
1 tbsp. balsamic vinegar
1/2 tsp. salt
1/4 black pepper
Pinch of crushed red pepper flakes
FOR THE BREAD
1 large baguette, sliced
Olive oil, for brushing
Vegan Mozzarella sprinkled on ( Brand used Daiya)
Directions:
1. Mix together tomatoes, garlic, and all seasonings; basil, olive oil, vinegar, salt, black pepper and red pepper flakes. Let marinate for 10-15 minute while bread bakes.
2. Preheat oven to 350°F Brush bread on both sides with olive oil. Top with mozzarella cheese. Place on baking sheet. Bake for 5-10 minutes.
3. Spoon tomato mixture on top of bread and enjoy!
Tips:
Some tomatoes are super juicy. You can drain the tomato juice after dicing or use roma tomatoes which have less juice and are firmer.
