Fishing Backyards to Offshore on my 18' Skiff!! Sheepshead, Snook, Drum, Tripletail and Kingfish

3 Days fishing the Florida winter for whatever is willing to bite! Catch, Clean, Cook Kingfish, amazing dip!

JM Simple Smoked Kingfish Dip Recipe!

Brine, 8-24 hours in fridge
Large bowl filled with water
1 cup of brown sugar
1 cup of garlic salt

Smoke
coat brined fish with garlic powder and paprika
smoke skin down at 200 degrees for 3 hours or until fish has reached 145 degrees internal.

Dip
2 lbs of smoked kingfish, bone and skin removed
1/2 cup of light sour cream
1/2 cup of light mayo
1/2 cup of pickled jalapeño juice
1 tablespoon of garlic powder
1 tablespoon of salt
1 tablespoon of paprika
