Spam Musubi (Keto Friendly, Sugar Free, and Low Carb)

INGREDIENTS
1 can spam
12 ounces cauliflower (this yields 3 musubis, have more on hand if you want more than 3 musubis)
1/4 cup Tamari
1/4 cup water
1/4 cup sweetener (I am using allulose)
4 crushed cloves of garlic
1 inch crushed ginger
DIRECTIONS
Step 1: Microwave the cauliflower until soft enough for the food processor to cut through easily. Add water, microwave for 2 minutes. Strain the hot water out. Rinse under cold water to bring it to a temperature warm enough to touch. Ring out as much water as possible till cauliflower is dry.
Step 2: Slice the spam.
Step 3: Prepare the secret sauce. Combine Tamari, water, sweetener, garlic, and ginger in a pot and simmer the spam flipping the spam halfway through. I allowed the spam to simmer for 2-3 minutes per side. Add water as needed.
Step 4: Build the musubi.
Step 5: Enjoy! :)
