In this video, we will be making Mapo Tofu (麻婆豆腐, má pó dòu fu), a classic Sichuan dish that was popularized in 成都 (chéngdū) during the Qing Dynasty. While there are countless variations to this recipe, this version will not only be easy and fast, but also as authentic as possible. This is part of our ''Something Spicy'' series, where we explore different spicy foods.

🌶️Ingredients:
600g silken tofu
300g ground pork (can substitute for beef or shiitake mushrooms)
2 tbsp Sichuan peppercorns
4 tbsp ginger
2 heads of garlic.
3 tbsp spicy doubanjiang
2 tbsp Chiu Chow chilli oil (more if you dare 🌶️)
1 tsp chicken powder with 1 cup water
2 tsp cornstarch mixed with ⅓ cup water
3 Spring onions
1/4 tsp sesame oil (optional)
1/4 tsp sugar (optional)
