Using fresh garden vegetables is the key to enjoying this classic southern summertime dish!
Ingredients:
4 slices bacon, sautéed (reserve bacon grease)
1 medium onion, diced
1 medium green bell pepper, diced
1 medium red bell pepper, diced
3 cloves garlic, chopped
3 cups fresh corn kernels or 1 small bag frozen
2 cups lima beans
½ pint cherry tomatoes, halved or 1 cup diced tomato
½ teaspoon paprika, optional
2 sprigs thyme
1 sprig marjoram
1 teaspoon salt
½ teaspoon pepper
2 scallions, sliced with tops for garnish
Directions:
Sautee the bacon until crisp. Remove to a paper towel to drain. Add the onion and peppers to the bacon drippings and cook for about 3 minutes. Add the herbs. Add the garlic and continue to cook for an additional minute. Add the salt and pepper. Stir in the corn and lima beans.
Cook for 5 minutes. Remove the sprigs of thyme and marjoram. Add the tomatoes. Cook for 2 minutes. Top with crumbled bacon and spring onion.
