Skillet Chunky Marinara Sauce
1 28 ounce can of San Marzano style plum tomatoes ( or what ever plum tomato you have )
4 cloves of sliced fresh garlic
2 springs of fresh basil with the stems on 8 to 10 leaves
4 tablespoons of olive oil salt to taste with a pinch of crushed red pepper and balsamic glaze for drizzle..
Instructions:
Crush tomatoes and add 1/2 cup of water to slush the can. Sauté sliced garlic in olive oil for less than one minute on a medium heat. Add tomatoes, salt, basil and crushed pepper. Bring to a boil and then lower heat back to medium low. Cook for 30 to 40 minutes stirring occasionally. When done remove basil stems and garlic. Drizzle about 2 teaspoons of balsamic glaze to sauce. Serve the sauce on top of your favorite pasta, eggplant or chicken cutlets. Garnish with more fresh basil, balsamic glaze and Parmesan cheese.
