Rustic Nuts Bread | 坚果面包 | 无糖无油 | 无需面包机 | 免揉面 | No Knead | No Sugar & Oil | Easy Recipe | Eng Sub 中文字幕
坚果面包
~高筋面粉/面包粉-500g
~蜜糖-60g
~盐- 3/4 茶匙
~酵母-2茶匙/6g
~温水-300ml
~葡萄干- 100g
~蔓越莓- 50g
~核桃- 80g
~杏仁- 50g
烤盘垫一层烘焙纸
200度/25~30分钟
1) 葡萄干和蔓越莓加入热水,将他泡软,備用
2) 核桃切成小块
3)高筋面粉过筛,做面包可以不用过筛,不过这是我个人习惯,习惯过筛,是因为担心面粉有结块或小虫,如果不想过筛,可以省略这步骤,然后加入+盐+酵母,先搅拌均匀,加入蜜糖,再搅拌均匀后,加入温水,水分为2次加入,把全部材料用刮刀搅拌均匀,加入葡萄干+蔓越莓+核桃+杏仁,继续搅拌,这个部分可以不用手,不过今天我想让坚果更均匀,所以我用手了,把坚果搅拌均匀即可,揉成圆形面团,用保鲜膜包好,准备醒面2倍大
4)面团醒两陪后,撒一些面粉,用手压出空气,再把面团称一下重量,目前只需分为2份,不需要揉面,用擀面棍擀成椭圆形,卷成长形面团,放入烤盘,这个做了两个大的长形面包,然后用盖上湿毛巾,把面包盖好,等待发至一倍大
5) 一倍大后,可以开始预热烤箱,200度/15分钟,先在面包表面均匀的洒上一些面粉,然后在面包上面用刀子划上几刀
6) 15分钟后,可以开始烤面包了,放入低层,烤箱,200度/25~35分钟, 20分钟的时候,要注意面包的颜色,如果面包不均匀,可以将面包取出烤盘转一下,颜色均匀后,可以在面包上面盖一层的铝箔膜,烤至30分钟即可,因为每个人的烤箱不能,重点是烤到你满意的颜色即可,这款面包外皮较硬,外脆内软是正常的

3) Sieved the high gluten flour, add + salt + yeast, mix well, add honey, after stir evenly, add warm water, water divided into 2 times to add, mix well with spatula, add raisins + cranberries + walnuts + almonds, this part spatula, but today I want to use my hand, this more easy to mix well, kneaded into a round dough, wrapped in plastic wrap, rest until dough 2 times larger
4) After the dough is ready, sprinkle some flour, press out the air by hand, then weigh the dough, this time we need 2 dough, divided into 2 parts, no need to knead the dough, roll the dough into an oval shape with a rolling stick, and roll into the long dough, put it into a baking pan, this makes two large long b
dough, then use a wet towel cover the dough nicely, rest until double size
5) After dough double size, preheat oven, 200 degrees / 15 minutes, sprinkle some flour evenly on the surface of the dough, then scratch the dough a few line with a knife
6) After 15 minutes, put in the lower desk, 200 degrees / 25 ~ 35 minutes, after 20 minutes, pay attention to the color of the bread, if the color of bread is uneven, you can turn the baking pan, if color is ready, can cover the bread with a layer of aluminum foil on top, this depend to ur own oven, most important is color u prefer, this bread the skin is crisp and inner od bread is soft
