Ingredients
1 tbs vegetable oil
1 chopped onion
1 tsp coriander powder
1 large chopped potato
600g / 21 oz carrots diced
500 ml vegetable stock
500 ml chicken stock
200 ml hot water
handful fresh coriander
Method
Heat 1 tbsp vegetable oil in a large pan, add 1 chopped onion, then fry for 5 mins until softened.
Stir in 1 tsp ground coriander and the chopped potato, cook for a couple of min.
Add the chopped carrots and vegetable and chicken stock and hot water, bring to the boil, and then reduce the heat.
Cover and cook for 20 mins until the carrots are tender.
pour into a food processor with a handful of coriander, then blend until smooth. do this in small batches not to overfill the food processor. when smooth, pour back into the pan, add salt if necessary, then reheat to serve.
