Recipes
BEER BRINE
Beer (your choice) 24oz (2cans)
Salt 1oz
Sugar 1oz
Mix all ingredients together until combined
FRIED CHICKEN
Chicken Thigh Meat 2lbs
Beer Brine 24oz
All Purpose Flour 2 cups
Cajon Seasoning 2oz
Honey 4oz
Water 2 cups
Canola Oil 2 qt
Remove excess fat from chicken thighs
Brine chicken for a minimum of 4 hours
Preheat oil in cast-iron pan to 350 degrees
Place flour into bowl and mix in cajun seasoning
Place water into bowl
Using a 2 stage coating process water first and flour last coat chicken in water shake of excess and place into flour and coat on all sides remove any excess and repeat if necessary
Place coated chicken onto sheet pan
When oil is up to temperature slowly dunk chicken until submerged and fry until golden brown and internal temp of chicken reaches 165 degrees
(If chicken is golden brown but not cooked all the way you can place into an oven at 350 degrees until internal temperature is 165 degrees.)
Place chicken on sheet pan lined with paper towel to soak up and remaining oil
Drizzle honey
