Raw fish dressing on the Weber

This is all about bringing the flavour of char and smoke to a great dressing. Use the Weber for something a little different. Do this.
3 whole Spring onions, washed , 200ml Olive oil, 50g Sesame, 2 cloves of Garlic, sliced, 1 chopped green Chili - or as much as you would like, 20g Ginger, chopped , 100 ml Soy sauce, Lime, 10g Coriander, coarsely chopped.
Lightly oil and season the spring onions.
Place the spring onions on the grill to char turning continuesly this only takes a minute or two
Place the olive oil in a small pot on the heat to smoking point - I know it goes against conventional knowledge - trust me.
In a separate pot (not plastic or glass) combine the sesame seeds , garlic, ginger and chili.
Remove the spring onion from the grill and chop coarsely. Add to the rest of the ingredients
Pour the smoking hot olive oil over the rest of the ingredients.
Add the soy, squeeze fresh lime in and add chopped coriander.
-Thats it, enjoy this toastie, smokey dressing with raw or seared salmon.
