POLLO ENTOMATADO CON PAPAS is Mexican comfort food at it's best, soupy and hearty all rolled up in one. The authentic mexican seasoning come out in an amazing way, packed with flavor. This dish takes me way back to my childhood, my mom often had it w as waiting for us when we got home from school and we could identify it as soon as we walked in the door, she served it with a fresh pot of pinto beans and homeade flour or corn tortillas. This is one dish worth licking clean, which is something I did alot as a kid. The flavor of the roasted tomatoes and subtle sweetness of the carrots with the spices and subtle flavor of the cilantro is outstanding. This dish is definitely a winner.
INGREDIENTS-------------------
5 Chicken legs (with skin)
3 Chicken thighs (cut in half / no skin)
1 small onion (julienned)
2 chopped green onions (white and green)
1/2 tsp oregano
2/3 tsp peppercorns
2/3 tsp whole cumin
3 med/large garlic cloves
1 tsp chicken bouillon (knorr)
2 tsp chicken bouillon tomato flavor (knorr)
2 Tbsp all purpose flour
salt (to your liking)
1 orange bell pepper (thin strips)
5 roasted Roma tomatoes
2 roasted serrano peppers (optional)
1 celery rib ( diced)
small bunch cilantro
1 large russet potato (cubed med/large)
1 C. water
1 & 1/2 C. chicken broth (or water)
MOLCAJETE INGREDIENTS-------------------
2/3 tsp peppercorns
2/3 tsp whole cumin
3 garlic cloves
1/2 tsp oregano
1/4 tsp salt
1 C. water
BLENDER INGREDIENTS-----------------------
5 Roasted Roma tomatoes
small bunch cilantro
1/2 tsp oregano
1 tsp chicken bouillon
2 tsp chicken bouillon tomato flavor
molcajete mixture
