Vegan Soya Biryani Recipe | South Indian Style Biryani with Soya Chunks

I make this vegan soya biryani often! It's easy, doesn't require too much prep, and is just so so good! I like to pair it with an onion raita, lots of papad, and some spicy pickle on the side. Make this for your family and friends and I'm sure they'll love it! The texture of the soya chunks will also make your non-vegan friends very happy! Let me know if you try it out 😄
Ingredients:
2 cups white basmati rice
2 Tbsp refined coconut oil
1 tsp cumin seeds
1 tsp fennel seeds
2 Ceylon cinnamon sticks
3 - 4 cloves
1 cup onion thinly sliced
1/2 cup tomatoes roughly chopped
2 cloves garlic finely chopped
1/2 cup mint roughly chopped
1/2 cup cilantro roughly chopped
2 slit Thai green chilis
1 tsp turmeric powder
1 tsp Kashmiri red chili powder (sub with paprika)
1 Tbsp Biryani masala (sub with 2 tsp garam masala)
2 cups soya chunks (you can find this at any Indian grocery store)
1 cup full-fat coconut milk
3 cups hot water
1 tsp garam masala
salt to taste (we used 2.5 tsp)
