Friands, or financiers as they know in France, are little light-as-air french cakes. Outside is gloriously crispy with a very delectable soft and melt in mouth inside. Since almond meal is the base for friands, brown butter works really well here. It gives added depth to the almonds bringing out their nutty flavour as well as adding a slight richness to the whole thing.
