Ganpati aur Gauri ke baad jab aata hai Rishi Panchami ka pavitra din, toh thali mein sajti hai yeh satvik aur sukoon bhari sabzi. No onion, no garlic – sirf shuddh aur soulful flavours jo mann aur tan dono ko shanti dete hain. Yeh sirf ek dish nahi, balki hamari paramparaon ka hissa hai, jo har bite mein devotion aur purity ka ehsaas dilata hai.

Ingredients
1 Tbsp - Oil
¼ Cup - Yam cubed
¼ Cup - Sweet potato cubed
1 No - Drumsticks peeled
¼ Cup - Red Pumpkin cubed
3-4 No - Green chilli
¼ Cup - Colocasia leaves stem chopped
1 No - Corn cobette
¼ Cup - Ridge gourd chopped
¼ Cup - Snake gourd chopped
¼ Cup - Bottle Gourd chopped
¼ Cup - Okra chopped
¼ Cup - French beans chopped
¼ Cup - Peanut
Salt to taste
¼ Cup - Amaranth leaves
¼ Cup - Fenugreek leaves
¼ Cup - Red amaranth leaves
2 No - Colocasia leaves chopped
Water as required
1 ½ Tbsp - Tamarind paste
2 Tbsp - Jaggery
1 Cup – Fresh coconut granted
Method:-
1. Place a kadai on medium flame and heat oil.
2. Add cubed yam, cubed sweet potato, peeled and cut drumsticks, cubed red pumpkin, chopped green chilli and chopped colocasia leaves stem mix well. Saute for few seconds.
3. Now add corn cobette, chopped ridge gourd, chopped snake gourd, chopped bottle Gourd, chopped okra, chopped french beans, peanut and salt to taste mix well.
4. Add amaranth leaves, fenugreek leaves, red amaranth leaves, chopped colocasia leaves mix well. Pour in enough water to cook.
5. Cover and cook on medium flame for 25–30 minutes, stirring occasionally.
6. Vegetables are tender, add tamarind paste and jaggery. Cook for another 5 minutes.
7. Add grated coconut, stir well, and cook for 1 minute. Turn off the flame.
8. Transfer in serving bowl and garnish with fresh grated coconut.
