How To Make Shrimp Pad Thai by Vivianne's Kitchen

This video is on how to make Shrimp Pad Thai.
INGREDIENTS:
1 bag pad Thai noodles
1/2 cup tofu extra firm
10 jumbo shrimp
2 eggs
5 cloves garlic
1 lime, cut into wedges
1 cup bean sprouts
1/4 cup sweet preserved radish
14 cup crushed peanuts
2 tablespoons dried crushed chili
3 tablespoons vegetable oil

SAUCE MIXTURE:
1/2 cup palm sugar
1/4 cup fish sauce
2 tablespoons water
1/3 cup tamarind concentrated
2 tablespoons sriracha sauce

INSTRUCTIONS:
To make the pad Thai sauce, in a small sauce pan over medium heat, add the palm sugar, fish sauce, tamarind paste, water and sriracha sauce. Combine all the ingredients together.

Simmer until the palm sugar is dissolved, about 3 minutes. At this point, adjust the taste by adding ingredients according to your taste. Set aside.

Heat oil in a wok or large non-stick skillet over high heat. Add the garlic and sweet radish. Cook until the garlic is slightly brown.
Add the tofu, shrimp and 2 tablespoons of the sauce mixture. Cook for two minutes.

Add the noodles and the rest of the sauce mixture. Continue stirring to keep noodles from sticking to the wok. After 3 minutes, taste noodles to check if they're soft enough. If not, add 3 tablespoons of water and continue cooking for a little longer. Toss together and cook for 5 minutes.

Push the noodles up one side of the wok, add a teaspoon of oil. When the oil is hot, add eggs. As soon the eggs begin to set about a minute or two, gently stirring until the eggs are scrambled.
Add the scallions, bean sprouts and combine with the noodles and eggs. Turn off the heat.

Transfer to a serving plate. Garish with lime wedges, dried chilies and crushed peanuts.
