To see how freeze-drying is done, we visit the Elena plant, which specializes in freeze-drying not just fruits and vegetables but also meat, ready meals, soups, sauces, pasta, and rice. The process boasts an average yield of 10:1, meaning 100 kg of frozen strawberries results in about 10 kg of freeze-dried strawberries.
Production starts with sourcing raw materials: local fruits and vegetables are used alongside exotic ones imported from abroad. These arrive in refrigerated trucks and are stored in freezers at temperatures as low as -25°C.
The plant features an automatic packaging machine for retail-sized portions. Freeze-drying one batch can take from 12 to 40 hours, depending on the product. Freeze-dried products are packed either manually in 10, 12, or 15 kg plastic bags or using an automated weigh-packing machine.
Additionally, freeze-dried ingredients are used in food supplements, including collagen, bioaronia, and celery capsules. Freeze-dried products generally have a shelf life of about 12 months but can be stored for many years, thanks to technology adapted from space exploration!
