Enjoyed quite a few of these while vacationing in Peru. Quick, easy, and delicious!
3 parts Pisco
1 part lime juice
1 part simple syrup
1 egg white
Bitters for garnish
Combine first 4 ingredients in a Shaker and shake vigorously (count to 15)
Strain into glass, pour foam on top, and garnish with bitters.
You can chill the Pisco before using.
