Mango Salsa:
1 large mango — any variety, peeled and cut into small cubes
1/4 cup diced onion
1 small jalapeno — chopped
1/4 cup chopped cilantro
Juice from 1 lime (we use half)
Salt to taste

Fish recipe (any white fish will work):
-Season both sides of fish with fresh lemon juice, salt, pepper, garlic powder, and blackened seasoning
Heat a pan on medium high heat and melt 1-2T of coconut oil. Once melted add 1T of minced garlic and cook until fragrant.
-Add fish and cook for 3-4 minutes each side.
