This cheesecake has long been won worldwide love💘 It is prepared in almost every restaurant, regardless of what cuisine they cook.
Today I want to share with you the recipe of the Basque cheesecake, incredibly tender and airy!!! This cheesecake is an alternative to the classic New York cheesecake with a shortbread base.
To make the cheesecake tender, airy with the right texture, it is important to follow a few rules:
all products should be at room temperature
products should be added gradually one after another, each time well mixed
bake the cheesecake at a high temperature
be sure to cool in the refrigerator for several hours, or better put it overnight
BASQUE CHEESECAKE
RECIPE:
Cream cheese (room temperature)- 2,2Ib
Sugar- 300g.
Eggs- 7pcs.
Heavy cream- 200ml.
Vanilla- 0.5 tsp.
Salt- a pinch
Flour- 2 tbsp.
1. Cream cheese to transfer to a bowl and beat until smooth.
2. Add sugar, vanilla and salt. Mix again.
3. Then add the eggs one by one, each mixing until smooth.
4. Sow flour. And mix again.
5. At the end, pour in the heavy cream little by little. Mix again thoroughly until smooth.
6. Line the baking dish with parchment paper and pour in the batter.
7. Bake the cheesecake at 410-428~°F for 40 minutes.
The middle of the cheesecake will be liquid, which is normal. Let the cheesecake cool in the dish at room temperature. Then refrigerate for 6-8 hours.
