You can make delicious stovetop BBQ chicken legs using a skillet. Here's a simple recipe to get that smoky, caramelized barbecue flavor without a grill.
Stovetop BBQ Chicken Legs Recipe
Ingredients:
4 chicken legs (drumsticks with thighs attached)
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp smoked paprika (for a smoky flavor)
1 tbsp olive oil or butter
Spicy Homemade BBQ Sauce
Ingredients:
1 cup ketchup
2 tbsp apple cider vinegar
2 tbsp brown sugar
1 tbsp honey (or maple syrup)
1 tbsp Worcestershire sauce
1 tbsp hot sauce (Frank’s RedHot, Tabasco, or Texas Pete)
1 tsp smoked paprika
1 tsp cayenne pepper (adjust to taste)
1 tsp chili powder
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp crushed red pepper flakes (optional for extra heat)
Instructions:
1. Combine Ingredients
In a saucepan over medium heat, add all the ingredients and stir well.
2. Simmer the Sauce
Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until the sauce thickens slightly.
3. Taste & Adjust
Instructions:
1. Season the Chicken
Pat the chicken legs dry with a paper towel.
Season with salt, pepper, garlic powder, onion powder, and smoked paprika.
2. Sear the Chicken
Heat a large skillet over medium-high heat and add the olive oil or butter.
Place the chicken legs skin-side down and sear for 3-5 minutes until browned.
Flip and sear the other side for another 3-5 minutes.
3. Slow Cook the Chicken
Reduce the heat to medium-low.
Cover the skillet with a lid and let the chicken cook for 20-25 minutes, flipping occasionally, until the internal temperature reaches 165°F (75°C).
If needed, add a splash of water or chicken broth to prevent burning.
4. Add the BBQ Sauce
Pour the sauce over the chicken and turn the heat to medium.
Cook uncovered for another 5-7 minutes, turning the chicken frequently, until the sauce thickens and caramelizes on the chicken.
5. Serve and Enjoy
Remove from heat and let it rest for a couple of minutes.
Serve with coleslaw, cornbread, or mashed potatoes.
