The happiness method can be used in any settlement providing conditions are met.
To get 100% with out messing about waiting in the settlement forever you need 3/4 settlers, 1food/water per settler, sheltered bed per settler, 1 medic stand of any level, 2 dogs and 4 cats ( catch them using crates ) quick save before opening so you only have wait once, once you have these just simply pop back to the settlement for a couple of mins every few days wait a few mins then carry on what ever you were doing no need to wait around for hours, you'll get 100% happiness, i have this now at outpost zimonja and finch farm and croup manor, i wasnt even at outpost zimonja or finch farm when i hit the 100% for each.

what is a motte and bailey A motte-and-bailey is a quick-build medieval style castle design:
Motte: a man-made earth mound with a small keep on top (wood at first, sometimes later stone).
Bailey: a fenced courtyard at the base for homes, stables, workshops, etc.
Why it was used: fast and cheap to build (mostly timber), great early defense—perfect for conquering armies (famously the Normans after 1066).
at its simplest its just a raised building in the building with a circlular wall around the outside for defence.
