Lauki aur Masoor Dal
Ingredients:
• Red lentils (Masoor dal) – 1½ pounds (≈700 g)
• Bottle gourd (Lauki) – ½ kg
• Small onion – 1
• Tomato – 1
• Ginger-garlic paste – 1 tablespoon
• Red chili powder – 2 teaspoons
• Salt – 1 teaspoon
• Turmeric powder – 1 teaspoon
• Garam masala – ½ teaspoon
• Tamarind pulp – ½ cup
• Whole dried red chilies – 6
• Curry leaves – 6
• Cumin seeds – 1 teaspoon
• Oil – ½ cup
• Green chilies & fresh coriander – as required
Method:
Wash the red lentils and cook them with 3 cups of water. When the lentils are half-cooked, add the chopped small onion, tomato, and bottle gourd pieces.
Add red chili powder, salt, turmeric, ginger-garlic paste, and tamarind pulp. Mix well and continue cooking until the lentils and bottle gourd are tender.
Add chopped green chilies and fresh coriander.
For the tempering (Tadka), heat oil in a small pan. Add whole dried red chilies, curry leaves, and cumin seeds. Pour this hot tempering over the cooked dal.
Finally, sprinkle garam masala on top. Serve hot with rice or roti.
White Mutton Karahi
Ingredients:
• Boiled mutton – ½ kg
• Ground onion – 1 cup
• Yogurt – 250 g
• Tomatoes – 2
• Green chilies – 6
• Crushed black pepper – 1 teaspoon
• Salt – 1 teaspoon
• Garam masala powder – ½ teaspoon
• Crushed red chili – ½ teaspoon
• Red chili powder – 1 teaspoon
• Turmeric powder – 1 teaspoon
• Cumin seeds – 1 teaspoon
• Ginger-garlic paste – 1 tablespoon
• Cream – ½ cup
• Oil – ½ cup
• Fresh coriander – as required
Method:
Heat oil in a pan and fry the cumin seeds until aromatic. Add the ground onion and sauté until golden.
Add turmeric, salt, green chilies, red chili powder, crushed red chili, crushed black pepper, garam masala, and ginger-garlic paste. Mix well and cook for a few minutes.
Blend the tomatoes with yogurt and add this mixture to the pan. Sauté until the oil separates.
Add the boiled mutton and cream, cover, and let it simmer on low heat for a few minutes.
Finally, garnish with fresh coriander and serve hot.
