Kapampangan sisig is a beloved Filipino dish that hails from Pampanga, often referred to as the culinary capital of the Philippines. It's a sizzling, flavorful mix of chopped pork (usually from the pig’s face and ears), seasoned with calamansi, onions, chili peppers, and sometimes topped with an egg or mayo for extra richness.
Traditionally, sisig was a way to make use of leftover pig parts, but today, it’s an iconic dish served in sizzling plates, offering the perfect balance of crunch, tang, and spice. Some modern versions even include chicken, seafood, or tofu!
Ingredients:
1 Kilo pork belly
3-4 pcs bay leaves
1 whole garlic
1 tsp ground pepper
1 tsp whole pepper corn
2 tsps salt
1 green chilli
3 red chillies
oil for cooking
1 thumbsize ginger
2 onions
3 tbsps mayonnaise
