Making Courgette (zucchini) Chutney | Planning for Christmas

I totally recommend you make this chutney because it is gorgeous and perfect for all year round and even more so at Christmas! Below is the recipe for you to make yourself. Please bear in mind this is my own concocted recipe so please don't repost on any blogs etc unless you specifically link back to me / this video the creator of the recipe. Enjoy! Mrs Brimbles Famous Courgette Chutney

1kg courgettes (approximately 6 medium)
2 red onions
2 cloves of garlic
600 ml distilled malt vinegar
1 tsp salt
1 tsp mustard or mustard powder
1 tbsp paprika
450g caster sugar
250g raisins
Oil for frying

Dice the onion and add to the pan with a splash of oil and fry until translucent. Meanwhile quarter the courgettes lengthways and then slice. Add the courgettes to the onion and continue to cook until just softened. Finely chop the garlic and add to the pan. Add in the spices and mix until everything is fully coated. Add the sugar and vinegar and simmer on a medium heat for half an hour. After half an hour stir in the raisins and allow to simmer for another half an hour until the mix is thick and sticky. Using a jam funnel, transfer to sterilised jars and seal whilst hot. Alternatively allow to cool and transfer to freezer containers.
