Gizzards in Tomato Curry Sauce
Ingredients:
• 550g chicken gizzards
• 250g skinless cherry tomatoes (halved)
• 90g green beans (trimmed)
• 1 medium onion (chopped)
• 2 cloves garlic (minced)
• 2 tsp curry powder
• 1/2 tsp black pepper
• 1 tsp chicken stock powder
• 1/4 cup cooking oil
• 4 cups hot water
• Salt (to taste)
Instructions:
1. Prepare the Gizzards
In a large pot, heat the oil over medium-high heat.
Add the gizzards and a pinch of salt.
Fry until golden brown – about 14 minutes.
Remove the gizzards from the pot and set aside.
2. Sauté the Aromatics
Carefully remove excess oil, leaving about 4 tablespoons in the pot.
Add the chopped onion and sauté over medium heat for 2 minutes.
Add the minced garlic and cook for 1 more minute.
3. Cook the Tomatoes
Add the halved cherry tomatoes to the pot.
Stir and cook for 4 minutes, until they begin to break down.
4. Combine with Gizzards
Return the fried gizzards to the pot.
Stir and cook everything together for 6 minutes.
5. Add Spices
Stir in the curry powder, chicken stock powder, and black pepper.
Cook for 4 minutes to let the spices bloom.
6. Simmer
Pour in the 4 cups of hot water.
Cover and simmer over medium heat for 80 minutes, until the gizzards are tender.
7. Final Step – Add Green Beans
With 10 minutes left on the timer, add the green beans.
Let them cook until just tender
