Kumar Agarwal started making chocolate about one year ago, and I suspect the clumpy first batch was what hooked him. Some of us love the challenge and steep learning curve... and I suspect cacao and bean to bar chocolate is often the ultimate temptress. Whether you are crafting it, or trying to convince customers of the value of the craft (more up my alley) there is something about the challenge that I suspect hooked many of us in industry.
I think Kumar brings deep curiosity and plenty of creativity to his craft, and is one of the makers that I have seen make good bars without too many flaws, from nearly straight out of the gate. I can't tell you how many makers who were many years into making and selling their bars, and still didn't find a home in The Chocolate Garage. I am very excited to see what is to come, and I look forward to Kumar's future creations.
