A few weeks ago I had this idea to combine two of my favorite things: sourdough Neapolitan pizza and juicy tender meatballs. The results were impressive. The fragrant smell and taste of sourdough pairs incredibly well with the meatballs in sauce. In this recipe, I also used a method called Auolyse, which makes the dough kneading extremely easy. Ingredients

For the Pizza:

00 Flour 500 g
Water 380 g
Sourdough Starter 100 g
Salt 14 g
Olive Oil 14 g

For the Meatballs:

Fresh Breadcrumbs 100 g
2 TBSP Milk
500 g Ground Veal
100 g Parmigiano
1 Garlic Clove
25 g Fresh Parsley

For the Meatball Sauce:

1 Can of San Marzano Tomatoes
1/2 Onion
2 Tbsp Olive Oil
Fresh Basil
Salt & Pepper
