COCONUT CRUST:
2 cups of flour
2/3 cup coconut flakes
1 cup powdered sugar
½ tsp salt
1 tsp coconut extract
- 12 tbsp melted butter
Mix together. Pour into 10x10 pan lined with parchment paper (around edges to be able to pick up). Bake at 350 for 20 mins.
PASSIONFRUIT LAYER:
3 cups sugar
½ cup flour
8 large eggs, room temp
1 cup passionfruit juice
1 tbsp Amoretti passionfruit
Mix the sugar, flour and eggs first. Then add in the passionfruits.
Pour into the baked crust and bake for 25-28min (until middle is not TOO jiggly, a little is ok).
*Cool in refrigerator for 2 hours before cutting. Sprinkle powder sugar on top.
