QUICK AND EASY GLAZED SALMON!

Easy and delicious Hoisin-Ginger Glazed Salmon served with a Healthy Soy-Sesame Udon Noodle Salad. This recipe is packed with simple, but amazing flavors, and is a great dish for a light lunch and dinner. Thanks for watching! ENJOY!!

Marinade
3-4oz portion salmon
3 tbsp. Soy Sauce
2 tbsp. Mirin
2 tbsp. Hoisin
4 garlic cloves, sliced
6 slices, peeled ginger
Soba Noodle Salad
1-8oz. package Udon noodles
4 ozs. Sugar snap peas, blanched and cut on a bias/angle
1 large carrot, peeled and cut in ribbons
1 oz. cilantro, chopped roughly
½ red onions, sliced thin
2 tbsp. sesame oil
4 tbsp. soy sauce
3 tbsp. rice wine vinegar
1 tbsp. chili-garlic sauce(optional)
METHOD
1. Combine all ingredients for marinade in a mixing bowl. Pour over salmon filets and refrigerate for 3-4 hours or overnight
2. In salted, boiling water add Udon noodles and cook for 4 minutes
3. After 4 minutes, add sugar snap peas, carrots and edamame beans to boiling Udon noodles. Cook for additional 3 minutes.
4. After 6-7 minutes, drain noodles and vegetables and immediately shock in cold water. Place in large mixing bowl
5. To the noodles, add in soy sauce, sesame oil, rice wine vinegar, cilantro and chili-garlic sauce. Toss and season, as needed.
6. Pull salmon from marinade and pat dry on paper towel.
7. Heat a sauté pan and coat event with olive oil. Slowly place salmon in pan skin side down and cook for 2-3 minutes or until browned.
8. Flip salmon and cook for another 1-2 minutes.
9. Strain remaining marinade into sauté pan and move to a 350-degree oven for 5-7 minutes.
10. Remove salmon and serve over Udon noodle salad.
11. Garnish with fresh chives and cilantro.
