Ambadyachi Uddamethi Recipe | Ambade Urad Methi | Hog Plum Curry in Goan Style
Ingredients:
} 8-10 Ambade (Hog Plums)
} 4-5 Byadgi chillies
} 1 tblspn Coriander Seeds
} 1/2 tspn Urad Daal
} 1/2 tspn Rice
} 1/4 tspn Fenugreek Seeds
} 1 Cup Freshly Grated Coconut (1/2 of Medium size Coconut)
} 1/2 tspn turmeric powder
} Salt
For tempering:
} 1 tblspn Oil
} 1/4 tspn Asafoetida (Hing)
} A spring of Curry Leaves
} 1/2 tspn Mustard Seeds
} 8-10 Methi Seeds
} 1/4 tspn Urad Daal
Method:
} Apply salt to peeled Ambade & set aside for 15-20 minutes.
} Dry Roast chillies, coriander seeds, Urad dal, rice & fenugreek seeds on a low flame until turns aromatic.
} Grind Coconut, roasted ingredients, turmeric powder using water into fine paste.
} To a pan, add oil, once the oil is hot, add all the ingredients.
} Add Ambade, saute for 2 minutes, add water, cover & let them cook nicely.
} Once Ambade are cooked, add the ground paste, water, salt, jaggery, mix well, cover & let it come to a nice boil.
} Ambadyachi uddamethi is ready to serve hot with hot rice. Enjoy
