(in English just in case my non-Maltese speaking friends want to try them out)

Torta tal-Corned Beef (Corned Beef Savoury Pie)

Ingredients for the filling:
1 yellow onion
Garlic cloves (as many as your heart desires)
2 medium carrots chopped in discs
2 medium potatoes mashed
Some fresh basil and parsley
2 cans of corned beef (340g each)
2 tbsp tomato paste (kunserva)
1 small can of peas
1 tbsp Worcestershire sauce
1 beef cube
Curry powder (season according to your taste preferences)
Salt and pepper
Some olive oil

Minestra (Vegetable Soup)

Ingredients:
1 yellow onion
1 large potato
1/2 cauliflower head
1 zucchini (qarabgħali twil jew 2/3 żgħar)
3 medium carrots chopped in discs
1/2 a small pumpkin
2 stalks of celery
Garlic cloves
1 chicken/veggie cube
1 pkt minestrone (green vegetable soup seasoning)
150g soup pasta (I used Ditalini)
Salt and pepper
Some olive oil

Torta tat-Tamal (Dates & Walnuts Sweet Pie)

Ingredients for the pastry:
200g AP flour
100g cold unsalted butter cubed
100g sugar
1 medium egg
Pinch of salt
A little bit of water as needed
Ingredients for the filling:
250g pitted dates cut up in tiny pieces
200g roughly chopped walnuts
70g AP flour
100g sugar
2 eggs (with the white and yolk separated)
1 tsp vanilla extract
Method for making the pastry:
1. In a mixing bowl, combine the flour, sugar, and salt.
2. Add the cubed butter to the flour mixture. Use your fingers to rub the butter into the flour until the mixture resembles fine breadcrumbs. Work quickly to keep the butter from melting. (You can also pulse it in a food processor).
3. Lightly beat the egg in a small bowl, then add it to the flour-butter mixture. Use a fork or your hands to mix until the dough starts to come together. If the dough feels too dry, add a teaspoon of water at a time until it binds, but be careful not to add too much.
4. Once the dough starts to come together, gently knead it a few times to ensure it’s well mixed.
5. Form the dough into a disc, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.

Ross il-Forn (Baked Rice)

Ingredients for the Sauce:
500g minced beef
1 can (340g) corned beef
1 big yellow onion
Garlic cloves
2 tbsp tomato paste (kunserva)
600g can of tomato sauce
1 tbsp Worcestershire sauce
1 beef cube
Salt and pepper
Herbs and seasonings of choice
Some olive oil
Ingredients for Assembling:
2 eggs
400g uncooked rice (for assembly it must be cooked it but not fully - I will also use less than 400g next time)
Parmesan cheese
Some bechamel sauce (optional)
