☕ About the Recipe:
This Level 2 espresso recipe is designed for those ready to go beyond the basics. We use freshly roasted, pre-dosed beans (not frozen), prepped with RDT and WDT techniques, tamped with precision, and extracted with real-time weight control. Our serving glass is 80 ml from the Loveramics Urban Twisted Glass series, providing ideal ergonomics and heat retention for proper espresso service.
☕ Ingredients:
Coffee beans: 18–20 grams (pre-measured into single-dose tubes)
Water: filtered, reservoir filled
⚙️ Tools:
Breville/Sage Barista Express espresso machine (built-in grinder used)
Single-dose tubes (room temp, not frozen)
Spray bottle (for RDT, sprayed directly into the tube)
WDT tool (Weiss Distribution Technique)
Bottomless portafilter
Funnel (included with the machine)
Normcore tamping station and auto-level tamper
Puck screen
Scale (for precise shot weight)
Knockbox
Spoon (for post-extraction stirring)
Espresso glass (80 ml)

1️⃣ Grind and Prep
• Spray the beans lightly inside the single-dose tube using RDT to reduce static.
• Start the grinder first for a hot-start grind, then pour the beans from the tube into the hopper.
• Use the included funnel on the bottomless portafilter to avoid mess.
• Distribute the grounds with a WDT tool for uniformity.
• Tamp using the Normcore auto-level tamper on a tamping station.
• Place a puck screen on top for an even water flow during extraction.
2️⃣ Extract the Espresso
• Insert the portafilter and begin extraction.
• Monitor the scale and stop the shot at your target weight—usually between 36–42 grams.
• Watch the extraction from the bottomless portafilter to ensure a smooth and consistent flow.
3️⃣ Post-Extraction
• Gently stir the espresso in the glass with a spoon to unify flavor and texture.
• Serve and enjoy.
4️⃣ Clean Up
• Knock the puck into the knockbox.
• Rinse and clean the portafilter and group head. Purge as needed.
