Nando’s is a South African restaurant chain famous for its flame-grilled Peri-Peri chicken. It was founded in 1987 in Rosettenville, Johannesburg, by Fernando Duarte and Robert Brozin. They knew they had something special after tasting a Mozambican-Portuguese grilled chicken marinated in Peri-Peri (African Bird’s Eye Chili).

Ingredients (Serves 4)
• 4 boneless, skinless chicken breasts or thighs, sliced into strips
• 1/2 cup (120ml) Nando’s Peri-Peri Sauce (choose your spice level)
• 1 tbsp olive oil
• 1/2 tsp garlic powder
• 1/2 tsp smoked paprika
• 1/2 tsp salt
• 1/4 tsp black pepper
For the Wraps:
• 4 large tortilla wraps
• 1 cup (100g) shredded lettuce
• 1/2 cup (50g) sliced red onion
• 1/2 cup (50g) sliced cucumbers
• 1/2 cup (50g) sliced tomatoes
• 1/2 cup (125g) garlic mayo or Perinaise (optional)
• 1/2 cup (50g) grated cheese (optional)
Crispy Peri-Peri Baked Potato Wedges
Ingredients:
• 4 large potatoes (russet or Maris Piper)
• 2 tbsp olive oil
• 2 tbsp Nando’s Peri-Peri sauce (choose your spice level) https://amzn.to/3FwK7i8
• 1 tsp smoked paprika
• 1/2 tsp garlic powder
• 1/2 tsp onion powder
• 1/2 tsp salt
• 1/4 tsp black pepper
• 1 tbsp cornstarch (optional, for extra crispiness)
Corn
• 2 tsp butter

oven to 220°C (425°F)Bake for 35-40 minutes
Quick Garlic Mayo (Perinaise Style)
Ingredients:
• 1/2 cup (125g) mayonnaise (regular or light)
• 1 clove garlic, minced or grated
• 1 tbsp lemon juice

• Salt & black pepper to taste
