Last month I was lucky enough to pop down to Brighton and meet Douglas McMaster, the genius and chef behind the zero waste restaurant, Silo.
Everything in the restaurant is carefully thought about and nothing is wasted - the milk from the cafe is made into cheese, the cushions on the chairs being made from upcycled denim and tights etc. They focus on seasonal ingredients supplied by local suppliers and making the most of everything... trust me, the food is incredible and I'm desperate to go back asap!
