This isn’t your regular paneer bhurji — it’s my special creamy twist!
Made with a roasted cashew-onion-garlic paste, a hint of spicy sauces, and soft grated paneer — this bhurji is rich, smooth, and bursting with flavour.
Perfect to pair with pav, roti, or rice — one bite and you’ll fall in love with this fusion-style Kaju Paneer Bhurji! 🧀🔥
🥘 Ingredients:
For Kaju Paste:
3 tbsp oil
4–5 dry red chillies
1 large onion (sliced)
1 full garlic bulb (peeled cloves)
20 cashews (kaju)
Salt to taste
½ cup milk (for blending)
For Main Bhurji:
3 tbsp oil
1 large onion (sliced)
A pinch of hing (asafoetida)
1 tsp readymade non-veg paste (or any spicy masala paste)
1 tbsp pizza sauce
1 tbsp schezwan sauce
1 tbsp tomato sauce
Prepared kaju paste (divided in 2 portions)
1 cup grated cauliflower
200–250g grated paneer
½–1 cup water (adjust for consistency)
1 tsp kasoori methi
2 chopped green chilies
Fresh coriander leaves – for garnish
👩🍳 Process:
Make Kaju Paste:
Heat 3 tbsp oil in a pan, add dry red chilies, sliced onion, garlic, cashews, and salt.
Roast till golden brown and aromatic.
Let it cool, then blend into a smooth paste using a little milk.
Prepare Base Gravy:
In the same pan, add 3 tbsp oil and sliced onion with a pinch of salt.
Sauté till light brown, then add hing, non-veg paste, pizza sauce, schezwan sauce, and tomato sauce.
Mix well and cook for 2 minutes.
Add Kaju Paste:
Add half of the prepared kaju paste to this mixture.
Mix, cover, and cook on low flame until oil separates from the sides.
Add Cauliflower:
Add grated cauliflower, mix well, and cover.
Cook on low flame until it turns soft and blends with the masala.
Final Mix:
Add the remaining kaju paste and grated paneer.
Pour water if needed for desired creamy consistency.
Cook on low flame for 7 minutes till thick and smooth.
Finishing Touch:
Add kasoori methi, chopped green chilies, and fresh coriander leaves.
Mix gently, cook for another minute, and switch off the flame.
Serve Hot:
Enjoy your creamy Kaju Paneer Bhurji with pav, roti, or steamed rice — it’s a total comfort meal! 😍
