Boulevardier Cocktail Pods (Part 2)
▷ Sodium Alginate Bath
▷ Frozen Boulevardier Pods
▷ Two Cold Water Baths
Method: Warm the sodium alginate bath to 125°F (52°C). Gently add one frozen pod and stir the bath until thawed and the membrane forms, avoiding direct contact. Remove with a spoon, wipe excess from the spoon, then rinse in two successive cold water baths. Store finished pods in a calcium-free portion of the cocktail.
