Have an event coming up that you need to bring a side dish for? This potato salad is a super easy one!
6 potatoes cook, peeled, cooled, and shredded
3 hard boiled eggs
1 cup Mayo
1/2 cup sugar
1 T mustard
I shredded most of them but did cut the last 2 into cubes. Feel free to add relish, peppers, or other colorful food to the salad
