🍫 Banana Oat Cocoa Cake

(Serves 5–6)
Ingredients:
• 120 g fine oats
• 250 ml hot milk (1 cup)
• 2 ripe bananas
• 2 eggs
• 5 tbsp cocoa powder
• a pinch of salt
• 1 tsp baking powder
• 50 g walnuts
• 80 g dark chocolate
• vanilla extract to taste
Preparation:
1. Soften the oats.
Place the oats in a mixing bowl and pour over the hot milk.
Let sit for about 10 minutes until the mixture thickens slightly.
2. Prepare the bananas.
Mash the bananas well with a fork — not with a blender! — to keep a nice texture.
3. Chop the nuts.
Finely chop the walnuts and set aside.
4. Mix the batter.
Add the eggs to the oat-and-milk mixture and stir with a fork or spatula ( not with a blender!) until smooth.
Then add the mashed bananas, cocoa powder, vanilla, baking powder, and salt.
You can mix in the nuts now or sprinkle them on top later.
(I also added a few goji berries for color and flavor.)
Gently fold everything together with a spatula — don’t overmix.
5. Bake.
Pour the mixture into a baking pan lined with parchment paper.
6. Then add a handful of chopped nuts on top — they’ll toast beautifully in the oven.
Bake at 180°C (355°F) for 35–40 minutes until set and fragrant.
7. Make the chocolate glaze.
While the cake is baking, melt the dark chocolate over a water bath until smooth.
8. Finish and serve.
Once baked, remove the cake from the oven and spread the warm chocolate glaze on top.
Let it cool slightly, then dust with powdered sugar.
