Ash-e Reshteh is a hearty Iranian noodle soup. Soak chickpeas and white beans, then simmer with onion, garlic, turmeric, and water until tender. Add lentils, then chopped herbs (parsley, cilantro, dill, scallions) and broken noodles; cook until the noodles are al dente. Finish with Kashk or yogurt and a drizzle of fried mint oil, topped with crispy fried onions. Serve hot.
