Saikyo Yaki is Kyoto-style miso-marinated grilled fish or meat. Sweet white miso (Saikyo miso) brings delicate sweetness and deep umami: lightly charred and fragrant outside, moist and tender inside. Fermentation seasons gently while keeping the texture plump—even with less salt. It’s simple to make at home with just a frying pan—no special tools needed. We use black cod here, but Spanish mackerel, salmon, sea bream, squid, chicken, or pork also work. Perfect with rice, sake, or even wine.

Ingredients (Serves 3)
・Black cod (gindara) – 3 filletsYou can also make this recipe with other seafood such as Spanish mackerel, salmon, swordfish, sea bream, or squid, as well as chicken or pork.
・Salt – a pinch (for prepping the fish)
Miso Marinade
・White miso (or Saikyo miso) – 3.5 oz / 100 g
・Sake (cooking sake) – 1 ½ tbsp / 0.8 oz / 23 g
・Mirin – 1 ½ tbsp / 0.8 oz / 23 g
・Sugar – 2 tsp / 0.28 oz / 8 g
