Ingredients:
• 750g potatoes, peeled, sliced (use a blender or mandoline), rinsed and drained
• 30g butter
• 1 tbsp minced garlic
• 1 tbsp olive oil
• ½ cup milk
• ¾ cup sour cream
• ¼ tsp salt
• ¼ tsp black pepper
• 100g mozzarella cheese, sliced
• 75g shredded mozzarella cheese
Instructions:
1. Prep the Butter Mixture:
In a pan, melt butter. Add minced garlic and sauté until golden. Stir in olive oil. Use this mixture to brush the inside of a cupcake/muffin tin.
2. Make the Cream Sauce:
Add the milk and sour cream to the remaining garlic-butter mixture. Season with salt and black pepper. Bring to a boil, then set aside.
3. Assemble the Stacks:
• In each cupcake mold, layer 5 slices of potato.
• Spoon a bit of the cream sauce over the potatoes.
• Add a slice of mozzarella.
• Add another layer of potato slices, more cream sauce, and a pinch of black pepper.
• Top each stack with shredded mozzarella.
4. Bake:
• Cover the tray with foil and bake in a preheated oven at 350°F (175°C) for 25 minutes.
• Remove the foil and bake uncovered for an additional 20 minutes, or until golden and bubbly.
5. Serve:
Let them rest a bit before removing. Serve as a side or enjoy on their own!
