🥣 Ingredients:
a kilo of scallops, 40 grams of vermicelli, a bulb of garlic.
1 tablespoon cooking wine, 1/2 teaspoon salt, pepper powder, 1 teaspoon corn starch.
1/2 tablespoon oyster sauce, 2 tablespoons soy sauce, 1 teaspoon sugar, some pepper powder.
🥣 材料:
1公斤扇贝(连壳重),40克粉丝,一整个大蒜头。
1大勺料酒、1/2小勺盐、适量胡椒粉,1小勺淀粉。
1/2大勺蚝油、2大勺生抽、1小勺糖,适量胡椒粉。
‼️ 1 大勺 = 1 Tbsp = 15 ml,1小勺 = 1 tsp = 5 ml
📝做法 Methods:
1. 粉丝先用清水泡软。
Soak the vermicelli in water until soft.
2. 扇贝肉洗干净(去除鳃和泥肠)。
Rinse the scallops with running water, get rid of the gills and intestines.
3. 用1大勺料酒、1/2小勺盐、适量胡椒粉和1小勺淀粉抓匀,腌制片刻。
Marinate with 1 tablespoon cooking wine, 1/2 teaspoon salt, pepper powder and 1 teaspoon corn starch.
4. 扇贝壳正反面都用刷子刷一下,放在滚水中煮2分钟,彻底的杀菌消毒。
Brush both sides of the scallop shell, then cook the shells in boiling water for 2 minutes and sterilize thoroughly.
5. 锅中倒入适量的食用油,油还冷的时候就加入蒜蓉,用中火慢慢的炸到蒜蓉金黄色,盛出,加入1/2大勺蚝油、2大勺生抽、1小勺糖和适量胡椒粉,拌匀备用。
Pour some cooking oil into the pot, add minced garlic while the oil is still cold. Fry the garlic over medium heat until golden brown, place into a bowl, add 1/2 tablespoon oyster sauce, 2 tablespoons soy sauce, 1 teaspoon sugar and some pepper powder, mix well and set aside.
6. 泡软的粉丝沥干水分,放在扇贝的壳里,放上扇贝肉,再淋上适量的蒜蓉酱,放入煮滚水的蒸锅内,大火蒸6分钟。
Drain the vermicelli and place in the shell of the scallops, top with the scallops and drizzle with garlic sauce, steam over high heat for 6 minutes.
7. 撒上葱花和红椒圈,淋上热油,完成。
Garnish with chopped shallot and red pepper, drizzle with hot oil, done.
