This is a series where I use Tukbaeggi to cook 1 person meal for those solo diners a warm, comforting, and loaded with flavor Korean dish. Craving Korean food but cooking for one? This ttukbaegi-style kimchi stew is your perfect solution. Packed with flavor, quick to prepare, and made in just one pot, it’s like having a Korean restaurant experience right at home—without the leftovers.

📍Ingredients:
• 1/2 cup chopped kimchi
• 100g pork belly, sliced
• 1 green onion, chopped (reserve some for garnish)
• 1 tbsp gochugaru (Korean red chili flakes)
• 0.5 tbsp sugar
• 2 tbsp soy sauce
• 1 tbsp minced garlic
• 1/4 onion, sliced
• 270ml water
• 1 tsp cooking oil
• Cooked rice (optional, for serving)
Instructions:
1. Heat 1 tsp of oil in a ttukbaegi (Korean stone pot) or small saucepan over medium heat.
2. Add green onions and stir-fry briefly until fragrant.
3. Add the sliced pork belly and cook until it turns white and starts to brown.
4. Stir in 1 tbsp gochugaru, 0.5 tbsp sugar, and 2 tbsp soy sauce.
5. Add the chopped kimchi, sliced onion, and 1 tbsp minced garlic. Cook together for a couple of minutes.
6. Pour in 270ml of water and bring it to a boil.
7. Reduce heat to low, cover with a lid, and let simmer for at least 7 minutes, ensuring the meat is fully cooked.
8. Garnish with reserved green onions.
9. Serve as-is or mix with rice directly in the pot like bibimbap for a heartier meal.
This creamy, bold-flavored kimchi stew with tender pork belly is the ultimate solo comfort dish. One pot, one person, and a whole lot of satisfaction.
