I guess I am back on YouTube for real this time. This video was a lot of fun to make, all of the ingredients and instructions for what I cooked will be down below. Enjoy!
Creamy Beef Pasta
1 1/2 tbsp olive oil
2 garlic cloves finely minced
1 onion finely chopped
1 lb ground beef
2 tsp Italian herbs
2 tbsp tomato paste
14 oz can crushed tomatoes
1/2 tsp red pepper flakes
1 1/2 tsp cooking salt
1/2 tsp black pepper
4 cups chicken broth/stock
elbow or penne pasta
3/4 cups heavy cream/Greek yogurt
parmesan cheese
Instructions
1. Sauté - Heat the oil on high. Cook garlic + onion for 1 1/2 minutes
2. Add beef and cook until no longer red, add herbs then tomato paste and cook for 1 minute
3. Add crushed tomato, chicken stock, salt, pepper, red pepper in, stir, then add pasta
4. Cook 15 minutes - Bring liquid to simmer then 15 minutes, stir occasionally
5. Add cream/yogurt, then simmer 1-2 minutes more
Sheet Pan Salmon
1/2 cup thinly sliced green onions
1/3 cup reduced sodium soy sauce
1/4 cup packed brown sugar
1/4 cup honey
2 tbsp sesame seeds
2 tbsp rice vinegar
3 garlic cloves, chopped
1 tbsp sesame oil
1 tsp crushed red pepper flakes
1 salmon fillet (2 pounds)
4 cups fresh brocolli florets
brussel sprouts
1/4 cup olive oil
1/2 tsp salt
1/2 tsp pepper
Instructions
1. In large bowl, whisk 1/4 cup green onion, soy sauce, brown sugar, honey, 1 tbsp sesame seeds, vinegar, garlic, sesame oil, pepper flakes, ginger
2. 1/2 cup marinade into a shallow dish, add salmon, turn to coat
3. Refrigerate, covered, 2-3 hours - refrigerate rest of marinade
4. Preheat oven to 400, drain salmon and put marinade in dish
5. Toss vegetables in oil salt pepper, put in layer around salmon
6. Bake until salmon begins to flake, 20-25 minutes
7. Put marinade in saucepan, bring to boil and cook 10-12 minutes, then serve with sauce
Chicken Quesadilla
1 chicken breast cut into 2 thinner pieces
1 tsp salt
1 tsp pepper
1 sp garlic powder
1 tsp paprika
1 tsp oregano
Mix well then season
Nonfat Greek yogurt
1 low carb wrap
1 egg
3 slices tomatoes
80-100g shredded chicken
20g low fat cheese
Intructions
(CHICKEN) Cook on medium heat for 8-10 minutes then shred using knife or forks
(QUESADILLA) Spread out mixed egg on pan, then place tortilla in it
Let cook, then flip over
Place tomatoes salt and pepper, chicken, cheese, then cook both sides of tortilla
Korean Ground Beef
1 tbsp canola or vegetable oil
2 pounds ground beef
4 cloves garlic minced
1/2 cup soy sauce
1/2 cup orange juice
1/2 brown sugar
1/4 cup sweet chili sauce
2 tsp sesame oil
1 tbsp cornstarch
2 green onions, sliced
Steamed broccoli
Rice
Instructions
1. Heat oil in cast iron pan over medium high heat, add ground beef and garlic, cook until browned 3-5 mins

2. Whisk together remaining ingredients in separate bowl
3. Pour over beef and simmer until thickened slightly
4. Serve over rice and veggies
Buffalo Chicken
1 lb skinless chicken breast (cubed)
salt and pepper
1/3 cup hot sauce or favorite
1 tbsp honey
1/4 tsp garlic powder
1/4 cup nonfat plain Greek yogurt
1 tbsp lime juice
Vegetables
Rice
Instructions
1. Heat a pan over medium, spray with cooking spray and add cubed chicken
2. Season with salt and pepper and cook until fully cooked 8-10 minutes, cook vegetables at same time
3. Add hot sauce, garlic powder, honey into a sauce pan and whisk while boiling to thicken some, when chicken is done add greek yogurt to sauce and mix until combined
4. Pour onto chicken and mix, then prepare bowls
Protein Burger
1 pound ground beef
1 large egg
1-2 tsp garlic seasoning
onion chopped
Pepper
Salt
Cheese
Lettuce
Burger bread
Instructions
1. Mix together beef, egg, garlic, onion, salt and pepper
2. Shape into burger, then put on grill
1. medium heat couple minutes each side
3. Add cheese 30 seconds before done
4. Put on whatever condiments and put into burger
